Cold Pea Salad

Long warm summer days are perfect for chilled pea salad!

This recipe uses frozen peas, which you don’t even have to defrost, green onions, water chestnuts, and smoked almonds. The peas do thaw a bit, but they’re wonderful crunchy and cold too.

I first encountered this delightful salad at a friend’s potluck. It was one of the dishes that everyone went back for for seconds.

I’m not sure of the original source of the recipe, but since the recipes calls for Smokehouse Almonds, perhaps the almond company? It could easily be made with tamari almonds as well. You just want salty, crunchy, roasted almonds for this salad.

It’s packed with potpourri of berries, speckled with banana slices, and held together with a grape-juice based gelatin.

Think Jello, but a grown-up, sophisticated version, with all natural ingredients and much less sugar.

Grilled Marinated Flank Steak

Flank steak is a lean, somewhat tough but flavorful cut of beef that benefits from the tenderizing effects of a marinade. It is best cooked medium rare and thinly sliced at an angle across the grain of the meat.

Prepared this way, marinated, cooked quickly at high heat, thinly sliced, flank steak practically melts in your mouth. This recipe calls for grilling the steak, but if you don’t have a grill, you can prepare the steak on a large cast iron frying pan as well.
