This is a photograph of my pet crayfish, Clippy II. I am not sure of his exact species, but it's the one I see most often for sale in pet stores in the northeast United States. Sex is easily determined, Clippy's got sperm ducts on his underside that you can't miss if you know what to look for.
Like many crayfish in the wild & captivity, Clippy has an observable difference in the size of his claws. The claw in the foreground has never been lost. The claw in the background was lost four molts ago, but returned at the next molt and has grown larger at each since.
The apple snail is not afraid of the crayfish and doesn't think twice about gliding straight over Clippy's face.
